Groundnut Stew
Ingredients
- 1 tbsp peanut oil
- 1 onion (diced)
- salt
- 2 cloves garlic (minced)
- 1 serrano pepper (diced)
- 1 tbsp ginger (minced)
- 1 tsp cumin
- 1 tsp cayenne
- 1 tsp coriander
- 1/2 c tomato paste
- 1 c coconut milk
- 2 1/2 c vegetable stock
- 1/2 c peanut butter
- 15oz can chickpeas (2 cups)
- 2 cups sweet potato (or one large, diced)
- 15oz can diced tomatoes (2 cups)
- 1 bunch collard greens (loosely chopped)
- 1/2 c peanuts

Heat peanut oil in a large pot over medium heat. Add onion and a pinch of salt. Cook for about 15 minutes until the onions are golden brown.

Add garlic, serrano pepper, ginger, cumin, cayenne, coriander, and tomato paste to the pot and stir everything together. Cook for about 3 minutes until the spices mellow.

While the vegetables are cooking, stir together coconut milk, vegetable stock, and peanut butter. Add the mixture to the pot along with chickpeas, sweet potato, diced tomatoes, and collard greens.

Turn the heat up to medium high. Bring the stew up to a quick boil and then reduce the heat and let simmer for about 10 minutes. Give it a good stir every so often.

Add peanuts and continue to stir for another 10 minutes. The stew is done when the sweet potatoes are tender and the liquid has thickened.
