Frank's Chicken
Ingredients
- 2 scallions
- 2 TBSP sour cream
- 1/2 tsp franks redhot original seasoning blend
- 1 TBSP butter
- ¼ cup panko breadcrumbs
- ¼ cup monterey jack cheese
- 1 TBSP franks redhot original seasoning blend
- 1 tsp salt
- pinch pepper
- 10 oz chicken cutlets
- 1 tsp salt
- pinch pepper
- 1 TBSP sour cream
Steps

Adjust rack to top position and preheat oven to 425 degrees. Wash and dry all produce.

Trim and thinly slice scallions (separating whites from greens).

In a small bowl, combine sour cream, franks redhot original seasoning blend, and a big pinch of salt. Stir in water 1 tsp at a time until mixture reaches a drizzling consistency.

Place butter in a medium microwave-safe bowl; microwave until melted, 30- 45 seconds.

Stir in panko breadcrumbs, monterey jack cheese, remaining franks redhot original seasoning blend, and a big pinch of salt and pepper.

Pat chicken cutlets dry with paper towels and season all over with salt and pepper. Place on a lightly oiled baking sheet.

Coat tops of chicken with sour cream, and mound with panko mixture, pressing firmly to adhere (no need to coat the undersides).

Roast on top rack until chicken is golden brown and cooked through 15- 18 minutes.
